Cranberry, Blueberry, Cherry, Golden Raisin
Cranberry, Blueberry, Cherry, Golden Raisin
# 69 - 2008
Nobody I know is allergic to any nuts. I have nothing against nuts and certainly nothing against walnuts. I had them sitting out on the counter. But, they were still sitting there when this came out of the oven so we have Cranberry-Blueberry-Cherry-Golden Raisin Celebration Bread and not the Cranberry-Walnut Celebration Bread that The Happy Cook baked and I saw here. TheHappyCook found the recipe here.
If you have the Bread Baker’s Apprentice by Peter Reinhart, you can find it there also. And I’ve baked it for Zorra’s World Day of Bread After Hours Party.
Besides leaving out the walnuts, however much by accident, there were a couple of things I changed on purpose.

The night before baking I put the cranberries and blueberries and cherries and golden raisins in rum to soak. It just seemed a celebratory kind of thing to do.

Recently I made quark (having seen it on What’s For Lunch Honey), so where the recipe called for water I used the leftover whey(liquid) plus a tablespoon. You can just barely see it in the above on the top right - looks like cloudy water.

The dough is kneaded, then flattened, the fruit put on it. . . and nuts if you remember them . . .

Kneaded . . .

It comes apart . . .

Shreds actually . . .

You think it’s ruined . . .

And then it comes together in a decent dough ball.

Since I had only boys and no girls, I maybe making up for missing out on braids. Little girls wiggle, bread dough just lies there waiting for you.

This makes grand bread especially when taken to dinner for a neighbor’s roast chicken dinner!

I guess I knead to do this again using the walnuts and try a different braid pattern. It makes lovely toast, bread pudding . . . a little sweet . . . takes well to butter (sigh) and jam. I somehow think it would make a really grand turkey or roast chicken sandwich (wink, wink).
Check out the after hours party for World Bread Day soon at Zorra’s and always every Friday Yeast Spotting at Susan’s WildYeastBlog Many Many breads for the week.
